Blueberry Pancakes

Sift 150g self raising flour in a large bowl with 1tsp bicarbonate of soda, add 40g caster sugar.  In another bowl beat 1 egg, 350ml butter milk (or 175g natural yogurt and 175ml semi skimmed milk) and 15g melted butter until combined. Then add the ‘wet’ ingredients to the ‘dry’ ingredients and mix until the batter is smooth.  Add 150g blueberries.  Heat a non stick frying pan over a medium heat.  Add a tiny bit of butter to the pan then spoon in some of the batter – you can make them any size you like.  After 1-2 mins bubbles start to form on the surface, turn the pancake over and cook for a further minute on the other side.  Once cooked transfer to a plate & keep warm while you use the rest of the batter to make more pancakes.
